Hey there, I’m Will Cesark from Woodmere, New York. I am 19 years old and I will be attending the Culinary Institute of America in August. I have been cooking since I was ten years old, attending Al A Carte in Lynbrook, a cooking school for all ages. I was lucky enough to attend the Junior Chef Program every Monday from September till June for five years. I landed my first job in the Hampton’s at the Hampton’s Food and Wine Festival. Then, I worked at La Botegga in Merrick for one summer. During the San Genaro Feast in Little Italy, New York, I worked the Sausage and Pepper booth at Florio’s and helped out anyway I could in the kitchen during those crazy 2 weeks.
As of now, I volunteer my time at the James Beard Foundation. I work with many great chefs, who travel from all over the country to showcase their skills in the kitchen that day. I can’t think of a better place to work, watch and learn.
So explore my videos and learn everything you need to know about fish with Chris McMantus from the Hewlett Fish Market, all the way to Italian cheeses with Lou DiPalo from the infamous Italian cheese store DiPalo’s in Manhattan. I’ll show you some great fresh local organic recipes, like how to can fresh tomato sauce right from the farm, organic mushrooms chicken marsala, and fresh clam sauce. Learn how to make a delicious turkey potpie with a twist using all of your left over’s from Thanksgiving.
